Sous Vide Cherry Gin Gimlet

Ingredients
Sous Vide Amarena Cherry Gin
1 jar Amarena cherries in syrup
1 750ml bottle Bar Hill gin
Pinch salt
Homemade Cherry Gin Gimlet
4 ounces sous vide cherry gin
1-ounce honey
Juice of 2 limes
Splash of water
6 gin-soaked Amarena cherries (reserved from sous vide gin recipe)
Method
Sous Vide Amarena Cherry Gin

Preheat the sous vide bath to 140 degrees F.

Using either a sous vide pouch or freezer-safe sealable plastic bag combine the cherries and their syrup with the bottle of gin and a pinch of salt. Carefully close partway and remove any excess air from the bag before fully sealing. Check that the bag is fully sealed.

Place the bag of cherries and gin into the preheated sous vide bath and cook for 2-3 hours.

Remove and allow to cool to room temperature. Strain the flavored gin into a bottle or jar and reserve chilled. Reserve the now gin-soaked cherries for garnish.
Cherry Gin Gimlet

Prepare martini glasses with ice and a few of the reserved cherries.

Using a cocktail shaker combine the cherry gin, honey, lime juice and splash of water. Shake vigorously to combine and chill.

Strain over the glasses of ice and reserved cherries soaked in gin. Garnish with a couple more cherries on top if desired.
